RECIPES : Tapenade

This is simple and delicious, fantastic with toasted ciabata

Pitted black olives
Anchovy fillets, oil-cured
Capers
Te Arai Motutira Extra Virgin Olive Oil
Salt and Pepper to taste

Mash the olives, anchovies, and capers with a mortar and pestle.
The rule of thumb is a little more olives than capers and anchovies,
but adjust according to how you like it.
Add very little salt and pepper. Drizzle in the oil until creamy.
