RECIPES : Kaipara Kumara Gratin

This is a simple and effective way to jazz up the humble mashed potatoes.
Itís a winner with the children and teams wonderfully with steak and winter vegetables.

3 large Kaipara Kumara
2 Rua Potatoes
Te Arai Motutira Extra Virgin Olive Oil
Milk
Parmesan Cheese
Bread Crumbs

Boil the potatoes and kumara until soft, mash with the milk and oil until smooth,
spread into an oiled pie dish and sprinkle with the bread crumbs and grated parmesan. Finish in the oven until golden on top.
