RECIPES : Basil Pesto

Fabulous with tomatoes in summer, soups in winter,
and bacon and pasta all year round

5 cloves garlic
2 large handfulls of fresh basil
1/3 cup pine nuts
3/4 cup Te Arai Motutira Extra Virgin Olive Oil
1/3 cup finely grated parmesan cheese

Process the garlic, basil and pine nuts until combined.
Add the cheese and pulse, and finally the olive oil in a slow stream.
Don't over process, its great with a slightly chunky crunchy feel.
