RECIPES : Lemon, Almond & Olive Relish

This relish is delicious served with fish, chicken or pork

1 unpeeled lemon, remove the seeds & finely slice
1/3 cup chopped fresh almonds
1/4 cup Te Arai Frantoio, Extra Virgin Olive Oil
2 cups firm black olives pitted & halved
freshly ground salt & black pepper to taste

Place all the ingredients together in a dish, stir to distribute the oil and serve
