RECIPES : Rocket Pesto

A pesto with punch, created by Michael Van de Elzen to tean with his Tomato, Borlotti and Olive Oil Soup - a real winner with our children.

1 cup well packed wild rocket
1 cup Te Arai extra virgin olive oil
30 gm pine nuts
2 cloves garlic
salt
60gm good quality Parmesan cheese

Blend the rocket, oil, pinenuts, garlic and salt until smooth.
This can be done most easily in a blender (stop once or twice to stir the ingredients), food processor or large mortar and pestle. When evenly blended, scrape into a bowl and stir in grated cheese.
Store in the refridgerator, covered with a film of olive oil in a screw top jar.
